Jasmine Shrimp Special Recipe
This recipe was developed at Boston's Park Plaza Legal Sea Foods for our customers who wanted a simple preparation. The recipe is named after the jasmine rice we use. At Legal, everything is teamed in our commercial steamers. At home, unless you have a large steamer, you'll need to precook the rice, broccoli, and shrimp and assemble at the last moment.
Jasmine Shrimp Special Ingredients:

- 1 cup Jasmine Rice
- 1 lb Broccoli
- 1.5 lbs Cooked Shrimp (21 to 25 count, peeled)
- 1/2 cup Salad Dressing (vinaigrette or oil and vinegar)
- 2 cups Monterey Jack or Cheddar cheese (shredded)
Yield: 4
Prep Time: 5 minutes.
Cook Time: 20 minutes.
Total Time: 25 minutes.
Jasmine Shrimp Special Cooking Directions:
Preheat the oven to 400°F.Bring a large pot of water to a boil, salt it, add the rice, and boil until just cooked through. Drain. Meanwhile, trim the florets from the broccoli, saving the stems for another use. Bring a second large pot of water tol boil, add the broccoli, and gently boil until cooked through, about 4 minues. Drain. Steam or boil the shrimp, cool, and set aide.
Place the rice in the center of a large baking dish. Surround with the broccoli florets. Arrange the shrimp in rows over the rice an bake for 2 to 5 minutes, or until the the ingredients are warmed. Remove from the oven, sprinkle first with the dressing, then with the cheese. Place back in the oven just until the cheese melts.
